Banana Nut “Ice Cream”

I am always coming up with new ways to use my NutriBullet. I’m having a lot of fun with this little kitchen “toy” that I purchased back in 2012. So far, I’ve learned how to make candy bars, fruit pops, mock ice cream, pureed soups, applesauce, milkshakes, meat sauces, and a variety of salad dressings. Learning how to make these delicious concoctions has been a culinary pleasure!

I look forward to creating more new recipes, unleashing my creative side. One of the things that I look forward to expanding on is my salad recipe collection. I eat a LOT of salad each week and I want to make delicious dressings that will allow me to give up the bottled stuff for good.

It took me about six months to try NutriBullet’s mock banana ice cream (the Natural Healing Foods book, page 150) and was pleasantly surprised at how much it tasted like real ice cream.  It is so tasty that I make it quite often. In fact, this recipe was the inspiration for my mock Banana Nut Ice Cream. The recipe is for one serving.

Mock Banana Nut Ice Cream

 Ingredients

  • 1 banana, frozen, cut into chunks
  • 4-5 walnut halves
  • 1 tbsp. crushed pineapple with juice
  • 1 light sprinkle of ground cinnamon
  • 1 drop of vanilla extract

Extract in short cup for approximately 2-3 seconds. (The mixture folds together really quickly.)

I am glad to be able to make a delicious dessert that is healthy, easy to make, and cool in the summer.  This is one of my favorite treats!
