Raw'kin Snack of the Week
In honor of our spotlight this week on the delicious and nutritious goji berry, check out these amazing goji berry recipes! Some are raw, some are veggie, all are goji-approved! Here is one to satisfy your sweet-tooth… It’s a healthier breakfast burrito!
- 1 large collard or kale leaf
- 1 small banana
- 1 tbsp honey
- 1/4 cup soaked goji berries
- 5 red dates, seeded
- 1-2 TB almond butter (optional)
Split the banana down the middle and lay it out within the collard. Spread almond butter (if using) on banana. Spread the goji berries all over the banana. Wrap the leaf shut — use honey to “weld” shut.
